Food & Wine Pairing

If you’re curious about what to eat with our wines, here are some delicious suggestions to enhance the Vina Moda experience...

2007 Vina Moda Viognier

Our fave? Shrimp sautéed with thai chiles and lemongrass served on a bed of steamed coconut mango rice. Top with fresh basil, chopped peanuts and toasted coconut.

2010 Vina Moda Viognier

Ceviche made with white fish or shrimp, combined with a citrus marinade and yellow fruit salsa. This combination creates a magnificent experience for the palate.

2010 Vina Moda Grenache Rosé

Homemade raspberry chipotle BBQ sauce and a rack of ribs… Add some sunshine and a picnic blanket and you are good to go!

Also try this wine with your favorite salmon dish, you’ll be blown away.

2007 Vina Moda Syrah

This varietal is sensational with a Roasted Pheasant or Pork Loin wrapped in bacon, served with a Berry/Syrah reduction.

2007 Vina Moda Zinfandel

Middle Eastern style Lamb with its use of cinnamon, cardamom, and paprika bring the flavors of this selection to life. Garlic Italian dishes such as Rigatoni with a mixed red and white sauce are also a great compliment.

2008 Vina Moda Mourvedre

We serve this wine with Elk sausage. Try browning sausage with kale, capers, artichoke hearts and tomatoes. Add a cup of stock and let simmer
together, serve over pasta, rice or polenta. The rich flavor of this wine fuses fabulously with wild game.  Or for an Asian flair, pair this magnificent wine with a Spicy Thai Red Curry dish.

2007 Vina Moda Barbera

Tomato based sauces stand up well to the acids in Barberas. A simple and easy preparation? Brown Italian sausage, add beet greens and saute, add garlic, diced tomatoes, eggplant and a glass of Vina Moda Barbera. Allow the flavors to simmer together, season with salt and pepper. Enjoy over your favorite pasta.

2003 Vina Moda Cabernet Sauvignon

A classic French-style rotisserie leg of lamb pairs fantastically with the Godfather I. Infuse with garlic, and brush with melted butter (apply butter with a branch of fresh thyme for extra flavor). Cook until rare 125.

2008 Vina Moda Cabernet Sauvignon III

Oriental Beef seasoned with five spices. Sour, bitter, sweet, pungent, and salty perfectly compliment this selection from our cellar.

2006 Vina Moda Petite Sirah

This wine serves well with any earthy, hearty dish. A French classic of Duck Confit served with lentils, or even a juicy hamburger topped with blue cheese. Barbecued spare ribs would also be a great compliment to Vina Moda’s Petite Sirah.

2007 Vina Moda Late Harvest Syrah

Slice a Tuscan melon in half, scoop out the seeds, and fill the each center with Late Harvest Syrah.Allow the wine to marbleize into the fruit, then slice and enjoy.

This little baby is also delicious when paired with walnut stuffed dates.
